I'm going to argue that donuts might be the perfect breakfast food.  You can make them ahead of time, store them in an airtight container, and you have fun breakfast for the entire week (you're welcome in advance).  From our churro donuts to our carrot cake donuts , we make donuts a LOT and I don't see this stopping anytime soon.

My trick? We make baked donuts in a donut pan.  They're a whole lot lighter or easier to bake.  They're a great way to use fruit, and I love that they're as easy as……pie.  Literally, start to finish, most baked donuts take under 45 minutes to make, finish, and store.  Plus, as we get more into cooking with kids in our house……these are easy enough for my elementary school aged student almost on her own.

Now, let's talk baking with kids and tools.  For donuts? I'm telling you, a silicone donut pan will change your life.  The ones we got are under $10 for a set of two (so you'll bake a dozen at a time).  You'll bake them on a cookie sheet for easy baking and removal from the oven and then the easiest part? Removing them from the donut pan.  Easy as can be…..strawberry donuts for the whole week of breakfasts (or let's be honest anytime of day).

Strawberry Donut Recipe: Cooking with Kids

Prep Time: 10 minutes

Cook Time: 10 minutes – 12 Minutes

Makes: 9-12 Baked Strawberry Donuts depending on size

Pro Tip: Use a donut pan for perfect shaping, we love these silicon donut pans

Strawberry Donut Ingredients:

8 tablespoons of softened butter

¼ teaspoon salt

1/2 teaspoon baking powder

1 ¼ cups all-purpose flour

2 eggs

1 cup sugar (for both donuts and topping)

3/4 cup of sliced fresh strawberries

1 cup of dried strawberries

Directions:

Preheat the oven to 375 degrees.

  1. To start, combine flour, baking powder, salt, 1/2 cup of sugar in a medium size bowl and set aside for later.
  2. In a separate mixing bowl, combine butter and eggs with an electric mixer.
  3. Add the dry ingredients to the wet ingredients and mix with electric mixer until throughly combined.
  4. Stir in fresh strawberries (do not mix, it will liquify the berries instead of gently folding them in).
  5. Spoon the batter into two donut pans, filling each cavity about half full.
  6. Bake for 10 to 12 minutes, or until a toothpick inserted in the center comes out clean.
  7. While donuts are baking, use a food processor to combine 1 cup of sugar and dried strawberries.  Set aside for garnishing.
  8. Carefully remove strawberry donuts from the oven and allow them to cool in the donut pans. Remove from the pans to a serving platter.
  9. Once cooled, and removed……. sprinkle with strawberry sugar.  Optional alternate, garnish with whipped cream or powdered sugar.

This was the first Have you ever attended a luau?This was the first I’ve EVER attended (fun fact, when we came to Aulani 5 years ago we were supposed to and it was rained out). The night before on this trip, we had some storms and I thought….oh no, round 2? But……the Hawaiian sun did it’s job and the weather for this was PERFECT. To be honest, this was not cheap.  I was a little apprehensive about whether I would feel it was worth the money but…..WOW was it ever.  The food was amazing, there were really fun activities for kids at the beginning and the cultural performances were phenomenal.  All three of us (including not wanting to spend even more $$$ vacation Robbie) left raving about the experience. Aulani wins for us so far on this trip that I’m so glad I booked in advance (highly suggest doing this as far out from your trip dates as you can)- the luau (try night 2 or 3 of your trip so you’ve had time to adjust to the time change)- Aunty’s Beach House (this is still at limited capacity so you DO need to book in advance, I booked a session for days 2, day 3, and day 4 and we’ve enjoyed having a bit of time each day)- character dining and prix fix dinner at Makahiki (we are one big meal each vacation day people, so DON’T book these the same day, I’d do character breakfast early on your first full day….you’ll wake up early with the time change and the dinner on whichever night you AREN’T doing the luau)Already dreaming of booking another trip here.

Five years ago. This exact place. Robbie had jus Five years ago.  This exact place.  Robbie had just finished two years of grad school.  And it had been a long, tough two years.  That year involved one major teacher strike in my district, many many many jobs and gigs for both of us, minimal time off together, a whole lot of unknowns and a whole lot of stress.The Disney and Aulani team probably had no idea that they were giving us the gift of much needed peaceful time together when they invited us on a trip to this magical place.  A trip that….to be honest, was beyond our means at the time.  We cherished every moment. A lot has happened since then.  A move, buying a house, seeing those years of hard work pay off.  And now….we did it.  We’re back.  Lazy river here we come. TLDR? If you’re in the thick of it, I see you.  We’ve been there. Family, Welcome Home……we did it.  Aulani for the week.

When training for my race, I didn’t stretch or warm up enough most days and….here we are.Lesson learned.  I’m 4 weeks post race (do not recommend running a 10k on a pulled muscle) and I’m……almost better.  I’m learning to stretch and walk and to take better care of myself so that I can start running again REALLY soon (we’re almost there I think).For now? I’m doing recovery walks and trying to strengthen my leg.  And trying to make sure I get enough protein.  When I talked about Built Bars on my stories, a LOTTTTT of you raced about their Puffs.  Yup, I get it.  They’re AMAZING.  I’ve been bringing them along on my walks (and gluten free friends….they have some great options for us).Have you ever pulled a muscle?
