Carrot cake is one of my favorite spring desserts. Okay, truth be told I like it any time of year, but Easter is the perfect excuse to whip up this classic dessert. This year for Easter I wanted to do something really fun for breakfast. I couldn’t think of anything better than combining my two favorite spring flings together – carrot cake and donuts!

Donuts are the most requested breakfast at my house. Usually, we pick some up from the local donut shop, but sometimes I make a homemade batch for us to enjoy. I’ve baked and fried my donuts, and while I’d love to tell you I have a preference between the two, I don’t. It totally depends on my mood. Somedays I crave dense cake donuts and other days I crave fluffy yeast donuts. Today, we’re going with this cake donuts recipe.

These donuts are like having dessert for breakfast. They’re slightly sweet on they’re own, but top them with cream cheese frosting and you’re in business! You can leave these donuts frosted or top with chopped pecans or sprinkles. I l-o-v-e sprinkles on my donuts and so do my kids. But top ’em however you like. The nuts add more crunch and the sprinkles make them a little more festive. Either way they’re crazy good!!

Homemade Carrot Cake | Carrot Cake Pancakes | An Easy Easter Table

Carrot Cake Donuts Recipe

Yum

Prep Time: 10 mins     Cook Time: 10 mins     Yield: 12 donuts

Ingredients:

Donuts

1 1/4 cup all-purpose flour

1/2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 cup unsalted butter, at room temperature

1/2 cup sugar

1 egg

1 teaspoon vanilla

2 tablespoons pineapple juice

1/2 cup milk

3/4 cup shredded carrots (about 1 medium-sized carrot)

Frosting

4 ounces cream cheese, softened

1 tablespoons unsalted butter, at room temperature

1/2 teaspoon vanilla

1/2 cup powdered sugar

Chopped pecans or sprinkles, for topping

Directions: 

Donuts:

  1. Preheat your oven to 350 degrees F.
  2. In a medium mixing bowl, stir together the flour, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a large mixing bowl, beat together the butter and sugar until combined. Add the egg and vanilla, and mix until smooth.
  4. Add half of the dry ingredients to the wet ingredients and mix until just combined. Pour in the milk and pineapple juice and mix. Add the rest of the dry ingredients and mix until just combined.
  5. Fold in the carrots by hand.
  6. Transfer the donut batter to a large ziploc bag or a piping bag (1/2 of the batter will fit in the bag at a time). Snip off a corner of the ziploc bag (or tip of the piping bag) and pipe the batter into two donut pans, filling each cavity about half full.
  7. Bake for 10 to 12 minutes, or until a toothpick inserted in the center comes out clean.
  8. Carefully remove donuts from the oven and allow to cool completely in the pans. Remove from the pans to a serving platter.

Frosting:

  1. In a medium mixing bowl, beat together the cream cheese, butter, and vanilla until combined and smooth. Add the powdered sugar and beat until smooth.
  2. Spread frosting over each donut, and top with chopped pecans or sprinkles, if desired.

We ALL have influence…..on this app, in our church pews, on our personal social media, in our private conversations, talking from 6 feet apart to our neighbors, in the way we address conflicting viewpoints (note to self on this one), over our children and our students.  To be in community with others is to have influence.  How are we each using it? ⠀

💛This lady? We’re talking all about Inspiration this month and she’s one of mine.  At 75 years old (happy birthday Dolly), not only is she one of THE most successful recording artists…..but talk about using your influence.  From speaking up to say that Black Lives Matter to founding her Imagination Library which provides books to children worldwide…..this lady proactively uses her talent and influence to serve others.  May I do the same at the ripe age of 75.⠀

💛So what does that look like for me? Authentic conversation everywhere…..including here.  To be transparent, every time I’ve spoke up about basic human rights here in the last few years…….people leave our community. And that? Is just fine with me.  Because, what good is this community if I can't speak about the values that are a core part of who I am? Now? I want to do more. A foundation? Charity work? I’m not sure, but I can tell you…..I’m inspired and I hope you are too.  Change starts with us.⠀

✨Story time.  I rarely share pictures of Lydia by herself on here.  But this? Is a story of when my seven year old reminded me how to love myself.  We had plans to shoot a BUNCH of images at once, a batch shoot.  So as Lydia watched me planning outfits and get organized, she decided she wanted to do her own thing.  She picked an outfit and her favorite shoes. ⠀
⠀
✨And she did the darn thing.  This? She picked the angle and background.  And the joy? Look at the joy.  That’s not posed. ⠀
⠀
✨Somewhere along the way…..as tweens or teens or adults, we lose the joy.  The, I feel pretty and want to twirl in my dress joy.  We worry that our thighs are rubbing together or our hair looks weird, or that we should be wearing a darker color to minimize things.  And…..we’re missing the point.  Sometimes, you just need a dress you can twirl in with a smile on your face.⠀

Yesterday, we all watched in horror as domestic terrorism took place before our eyes. It is….terrifying, sad, anger inducing, and yet ANOTHER example of the blatant hatred and racism that are sewed into the threads of our nation. What happened is not ok. I know that we all want better for our children. We want our babies to grow up safe, loved+valued.⠀

I talked in my stories today about ways to talk to your children about yesterday’s events. While I wish I could say that we won’t need to have anymore of these discussions……I think we all know that as a collective, we have a long way to go and that these dialogs will come up again and again.⠀
⠀
I want to remind you:⠀
💕you know your children, you know what is appropriate to share with them based on their age, knowledge of events, anxiety levels…..listen to your gut here⠀
💕I believe that information fights fear and anxiety, and that there are levels of information that age appropriate and some that aren’t (for instance, Lydia DID watch the news with us yesterday, but I left the room with her as they showed some of the more violent parts of the riot including footage of the shooting)⠀
💕it’s important to remind our babies that our role in their lives is to protect them, and that we will ALWAYS do that to the best of our ability⠀

Ways to Start a Discussion About Scary Things:⠀
💕draw a picture of feelings (you and your child, then share and describe)⠀
💕use toys or puppets to model feelings ⠀
💕movement helps, go for a walk and talk⠀
💕just start….”This is hard to talk about, but I wanted to discuss what happened yesterday with you and to hear how you are feeling about it.”⠀

💕It’s ok if you don’t know how to do this, or don’t have all the answers.  Parenting is about doing your best, and loving your kids.  And guess what? Your kids love the imperfect, honest version of you.  The journey of a 1000 miles starts with a single step.  I believe in you.  I believe in us.  I believe in our children and our ability to raise them in a way that changes……everything.⠀
