It’s soup season! This slow cooker pumpkin soup recipe is amazingly easy, and is a great way to get creamy pumpkin soup with VERY minimal prep or effort. It’s a perfect set it and forget it cooler weather recipe (and it also freezes well for future meals).
I’m all about a slow cooker soup recipe these days. While I wish I was an avid meal prepper or a spend and hour each day making a fancy dinner type of person….I’m just not. The truth is, I’m always on the hunt for a great recipe I can make quickly and easily. This time of year? It’s pumpkin season so I’m all about those fun pumpkin recipes for every meal of the day….from pumpkin bread to…..you guessed….. slow cooker pumpkin soup.
This is the crockpot pumpkin soup we made this week and it’s……a super easy pumpkin soup recipe that can make in advance and freeze or serve immediately with fresh crusty bread. It’s also one of my favorite ways to use canned pumpkin (we always stock up on canned pumpkin at the beginning of the season).
Crockpot Pumpkin Soup Ingredients
Let’s talk groceries and making this slow cooker recipe with as much ease as possible (bonus points for saving money too). This entire recipe? Literally everything? Was $20.57. And it’s enough for two full dinners if you store leftovers in an airtight container for the next day (or for one dinner now and one later if you freeze the remaining soup).

Ingredients to Purchase for crock pot pumpkin soup
- 6 cups of chicken broth (I bought a value size, 48 ounce carton of chicken broth…. you can also use vegetable broth if you’d prefer)
- salt and pepper
- olive oil (you can also use coconut oil if you’d prefer)
- curry powder
- garlic powder
- minced garlic
- ginger
- maple syrup
- coconut milk
- canned pumpkin (you can always make your own pumpkin puree with fresh pumpkin and an immersion blender if you prefer)
Directions for Slow Cooker Pumpkin Soup
I promise, prep for this delicious soup will take less than five minutes. Pull out your crock pot, it’s the only container you’ll need for prep. This was so easy, that my eight year old helped and probably should have done all of the preparations by herself.
We started by opening our canned pumpkin. It’s already a great puree so, no additional prep needed. We dumped it into our crock pot along with the chicken stock (used the complete carton). Add 3 tablespoons of olive oil or coconut oil (this helps to make the recipe a nice creamy soup and really mixes well).
After adding the main ingredients, it’s time to add spices and flavors. We used a tablespoon of salt and one of pepper, plus a tablespoon of curry powder. You can add either garlic powder or fresh garlic (I’ve tried with both and you end up with a fairly similar end result). For balance, we added about 4 teaspoons of maple syrup.
A few optional ideas: you can add bay leaves for extra savory flavoring or cinnamon for sweetness or yellow onion for a little extra kick
Once all ingredients are in the crock pot, then you can cook the soup on low for 6 to 8 hours or on 4 to 5 on high. When you reach the last 45 minutes, add a cup of coconut milk or oat milk. If you want a richer soup, you can also add a heavy cream or regular milk as it slow cooks (just wait until close the end).
And that’s it! A super easy recipe for slow cooker pumpkin soup. I love that it can be made as a vegan soup with lovely fall flavors. Then alternately it can be a delicious dish based around chicken broth if you’d prefer.
