Hot hot hot. It was 107 degrees this weekend. Luckily, once the sun sets……it becomes bearable. So each night, we’ve been sitting in our backyard watching the stars and enjoying summer cocktails. This week’s cocktail recipe is my absolute favorite…….Spiked Dole Whip! It’s the grown up version of one of my favorite drinks…..it’s refreshing and perfect for summer nights (plus by using Sweet’N Low I minimized the calories….so I can enjoy an extra one each evening)!
Spiked Dole Whip
2 jiggers rum
1 splash lemon juice
8 packets Sweet’N Low
2 cups frozen pineapple
1 cup whipped cream (plus extra for garnishing)
8 ounces pineapple juice
Combine all ingredients in a blender, top with whipped cream.
Serves 2.
