Happy Wednesday! Ice Cream Week continues around here……and what flavor just screams ice cream more than classic vanilla in the form of a vanilla mojito? Nothing, right? When Cruzan Rum sent over their delicious vanilla rum……I loved trying it out in a ton of different classic cocktails. And my favorite? This delicious vanilla and mint combo. It’s the perfect adult, ice cream inspired cocktail! The vanilla and mint flavors blend perfectly, and it’s sweet without being rich or creamy. Perfect for warm summer evenings…….and days on the beach!
Vanilla Mojito:
Ingredients:
3 jiggers of Cruzan Vanilla Rum
3 cups of club soda
1-2 tablespoons of sugar
25 fresh mint leaves
ice cubes
Instructions:
muddle 15 mint leaves in bottom of two glasses
combine vanilla rum, club soda, and sugar in a cocktail shaker
shake gently
pour over ice and muddled mint leaves
enjoy!

I have never tried Cruzan Rum before, Does it make the mojito very sweet? For some reason I am not a big fan of flavored rums or vodkas, don’t know why.
