Summer heat always makes me want to eat light, fruit filled meals. After a long weekend of eating, hubby and I both wanted a light, fresh salad. This was a gigantic hit, and SUPER easy to make!
Ingredients: olive oil, basil, parsley, chives, lemon juice, sea salt, 4 heirloom tomatoes, 2 cups of cubed watermelon, 1/4 cup of sliced red onion, 1/2 cup of feta cheese
1) Slice 2-4 tablespoons of herbs (basil, parsley and chives).
2) Mix herbs, 1 tablespoon of lemon juice, 3 tablespoons of olive oil and 1/2 teaspoon of sea salt
4) Add 1/4 cup of crumbled feta cheese and stir.
