This summer, we went to a fancy sushi spot for my birthday, and I had the most delicious pineapple sake cocktail. I've been dying to create a similar drink ever since……so, last weekend we did some experimenting. The final product? A delicious pineapple saketini! Fruity without being too sweet, and perfect for using up the last of the sake you've got sitting around after sushi nights!
Pineapple Saketini:
Ingredients:
3 jiggers of cold sake
2 jiggers of vodka
2 1/2 cups of pineapple juice
1/4 cup of tonic water
cubed pineapple and papaya
Combine all ingredients in a cocktail shaker and pour over ice. Garnish with cubed papaya and mango.
Serves two.

LOL – all I keep picturing with that title “Saketini” is Justin Timberlake and Jimmy Fallon busting out in some crazy rendition of another History of Rap.. “Sock it to me!” haha – I”m such a dork! but, seriously I could probably use one of those right now the silly mood I’m in!!!
